Chestnut Cake Layers:

600 g Maroni organic edible chestnut purée

200 g butter (softened)

4 egg yolks

4 whole eggs

2 teaspoons baking powder
Chocolate Cream:

6 eggs
-
300 g sugar
-
3 tablespoons cocoa powder

150 g dark chocolate
-
300 g butter (softened)
Decoration:

approx. 100 g hazelnuts

100 g dark chocolate
-
20 g butter
-
several peeled whole edible chestnuts

50 g sugar (for caramel)
Preparation
Chestnut Cake Layers

Beat the edible chestnut purée with softened butter until light and fluffy.

Gradually add the egg yolks and whole eggs, mixing thoroughly after each addition.

Finally, add the baking powder and mix until combined.
Bake 10 thin layers from the batter:

On a baking sheet lined with parchment paper (26 cm / 10-inch diameter), spread 1/10 of the batter evenly.

Bake at 180°C (350°F) for about 10 minutes, until the edges begin to brown slightly.

Repeat with the remaining batter.
Chocolate Cream

Chop and melt the dark chocolate over a water bath or in the microwave.

Beat the eggs with sugar until pale and fluffy.

Continue whisking over a water bath for 5–6 minutes, until the mixture thickens.

Remove from heat, add cocoa powder and melted chocolate, and mix thoroughly.

Refrigerate for 3–4 hours until the mixture thickens significantly.

After chilling, beat the cream again and gradually incorporate the softened butter.
Layer the cake with the chocolate cream, cover the sides as well, and refrigerate for at least 2 hours.
Decoration

Melt the chocolate with butter and spread it rustic-style over the top of the cake.

Coat the sides with finely chopped hazelnuts.
Caramelized Chestnuts

Prepare a light caramel from the sugar.

Let it cool slightly – it should drip slowly.

Insert a toothpick into the wider part of each chestnut and dip it into the caramel.

As you lift it, allow a thin strand of caramel to form.

Hold until the caramel fully sets.
Caramel decoration should be prepared just before serving, as caramel softens quickly.
