Ingredients for 4 Servings
📌 Soup Base:
✅ 25 ml sunflower oil 🌻
✅ 4 large lecsó bell peppers 🌶️
✅ 3 medium ripe tomatoes 🍅
✅ 20 g Univer Onion Paste 🧅
✅ 50 g Univer Édes Anna Sweet Paprika Paste 🌶️
✅ Salt & freshly ground pepper 🧂
📌 Toppings:
✅ 4 fresh eggs 🥚
✅ 1 tbsp vinegar 🍶
✅ 60 g smoked paprika sausage 🌭
Instructions
🔥 1. Sauté the Vegetables
- Heat the sunflower oil in a large pot.
- Add sliced lecsó peppers and sauté until softened.
- Stir in chopped tomatoes and Univer Onion Paste, cooking until the vegetables break down.
🥣 2. Blend into a Creamy Soup
- Transfer the mixture to a blender and blend until smooth.
- Pour back into the pot, add 400 ml water and Univer Édes Anna Sweet Paprika Paste.
- Bring to a boil and season with salt and pepper.
🥚 3. Prepare the Poached Eggs
- Bring water to a gentle boil in a small saucepan and add 1 tbsp vinegar.
- Create a whirlpool with a spoon and gently drop in an egg.
- Cook for 3–4 minutes, then remove with a slotted spoon and drain.
🔥 4. Make the Crispy Sausage Topping
- Slice the smoked paprika sausage into thin rounds.
- Fry in a dry pan until crispy, then finely chop to create a crunchy topping.
🍲 5. Serve & Enjoy
- Pour hot lecsó soup into bowls.
- Place a poached egg in the center and sprinkle with the crispy sausage topping.
