Lentil Goulash with Mustard and Roasted Sausage 🥘🌭

Ingredients for 4 Servings
📌 Goulash Base:
✅ 300 g lentils (soaked overnight)
✅ 2 bay leaves 🌿
✅ 1 large onion 🧅
✅ 2 garlic cloves 🧄
✅ 60 g Erős Pistás Hot Mustard 🌶️
✅ 150 ml sour cream (18%) 🥄
✅ 1 flat tbsp cornstarch 🌽
✅ 2 tbsp chopped parsley 🌿
✅ Salt & freshly ground pepper 🧂
📌 Toppings:
✅ 4 raw sausages (for frying) 🌭
✅ 20 ml sunflower oil 🌻
Instructions
🥣 1. Cooking the Lentils
- Rinse the soaked lentils and bring them to a boil in a pot with enough water to cover them by 1 cm.
- Add bay leaves, chopped onion, and minced garlic.
- Cover and simmer over medium heat for 35–40 minutes until the lentils soften and absorb most of the liquid.
🥄 2. Thickening the Goulash
- In a small bowl, mix sour cream, hot mustard, and cornstarch.
- To prevent lumps, add 2–3 tbsp of the hot lentil broth, mix well, and pour the mixture into the pot.
- Stir thoroughly and bring to a boil. Season with salt and pepper.
🔥 3. Roasting the Sausage
- Heat sunflower oil in a pan and fry the sausages until golden brown and crispy.
🍽️ 4. Serving
- Divide the hot lentil goulash into bowls.
- Place the freshly roasted sausage on top and garnish with chopped parsley.
