Palugyai Cake – A Historic Dessert Made with Edible Chestnuts
Palugyai Cake is one of the most recognizable and prestigious cakes made with edible chestnuts, originating from classic Hungarian and Austro-Hungarian cuisine. This elegant, layered dessert combines thin chestnut-based layers with a velvety cream filling, chocolate coating, and refined decorations of almonds and whipped cream. To this day, Palugyai Cake is regarded as a symbol of historic European pastry craftsmanship.
The History of Palugyai Cake
The history of Palugyai Cake dates back to 1874. At that time, Ferenc Jurkovits, head chef of the prestigious Grand Hotel Hungária, created a special birthday cake for Palugyai Jakab, the owner of the renowned Zöldfa Szálló hotel in Bratislava (Pozsony).
The cake stood out among other desserts of the era thanks to its innovative use of edible chestnuts in the form of a smooth chestnut cream and its modern, layered construction. The dessert was named Palugyai in honor of the celebrant and quickly gained recognition among the culinary elite of the 19th century. Today, it is considered one of the most important creations of classic hotel pastry tradition.
📌 The original Palugyai Cake recipe was provided by the Hungarian Museum of Trade and Hospitality.
Edible Chestnuts – The Heart of Palugyai Cake
The key ingredient of Palugyai Cake is edible chestnuts, which give the dessert its distinctive and refined flavor. Edible chestnuts are known for:
-
their natural sweetness,
-
a delicate, slightly nutty aroma,
-
a creamy texture once processed.
These qualities create the elegant and recognizable flavor profile of Palugyai Cake, clearly setting it apart from classic chocolate- or butter-based cakes.
Chestnut Purée in Palugyai Cake
Both historical and modern versions of the recipe use edible chestnut purée as the foundation of the cake. Chestnut purée is made from carefully cooked and finely processed edible chestnuts, preserving their natural flavor and velvety consistency.
In Palugyai Cake, chestnut purée:
-
forms delicate, thin cake layers,
-
blends perfectly with eggs and chocolate,
-
provides moisture and structural stability,
-
gives the cake its distinctive historic character.

30 g grated chocolate
-
8 eggs (separated)
-
100 g granulated sugar

-
1 package vanilla pudding powder
-
500 g whipping cream
-
20 g gelatin
Decoration:
-
chocolate (for coating)
-
sliced almonds

Instructions
1. Prepare the Chestnut Batter
Mix the Maroni Ambient edible chestnut purée with vanilla sugar, grated chocolate, and egg yolks until smooth.
In a separate bowl, beat the egg whites with granulated sugar until stiff peaks form. Gently fold the whipped egg whites into the chestnut mixture, keeping the batter light and airy.
2. Bake the Layers
Grease and flour a baking sheet. Mark five round cake rings on the sheet. Spread the batter thinly within each circle, to a thickness similar to classic Dobos cake layers.
Bake until lightly set and dry. Allow the layers to cool completely.
3. Prepare the Cream
Cook the vanilla pudding according to the package instructions and let it cool completely. Whip the cream until stiff and gently fold it into the cooled pudding.
Soak the gelatin in 100 ml cold water, then dissolve it gently over a water bath. Add the dissolved gelatin to the cream mixture and mix thoroughly.
4. Assemble the Cake
Layer the baked chestnut sheets with the vanilla cream, stacking them evenly. Once assembled, place the cake in the freezer for approximately 2 hours to stabilize the structure.
5. Decorate
Coat the top of the cake with melted chocolate. Decorate the sides with sliced almonds and finish with whipped cream rosettes for a classic, elegant look.
