🛒 Ingredients (serves 4):
-
500 g (1.1 lb) turkey breast fillet
-
500 g (1.1 lb) broccoli florets
-
30 g (2 tbsp) red onion paste (e.g., Univer)
-
2 tsp grill seasoning (1 + 1 tsp)
-
50 ml (3.5 tbsp) olive oil
-
100 g (3.5 oz) fresh baby spinach
-
60 g (4 tbsp) mayonnaise (e.g., Univer)
-
1 tsp freshly squeezed lemon juice
👨🍳 Preparation:
1. Roast the turkey
Preheat the oven to 185°C / 365°F.
Rub the turkey breast with red onion paste, sprinkle with grill seasoning, and drizzle with olive oil. Place in a baking dish, pour in 100 ml water, cover with aluminum foil, and roast for about 50 minutes.
After 30 minutes, remove the foil to let the turkey brown nicely.
2. Add the broccoli
Cut broccoli into florets. After removing the foil from the turkey, add the broccoli to the same dish, season with grill seasoning and olive oil, and roast everything until tender.
3. Make the salad base
Let the roasted turkey cool slightly, then slice it into strips.
Mix the mayonnaise with lemon juice, then toss with baby spinach and roasted broccoli.
4. Serve
Top the salad with turkey slices and serve immediately – this is a balanced dish full of flavor, protein, and vitamins.
💡 Tip:
This turkey salad with roasted broccoli also makes a perfect lunch to-go. Just pack the dressing separately and mix before eating.
You can swap baby spinach for arugula, or turkey for roasted chicken – a healthy meat salad always delivers.
